When I get stressed, I bake, and I was very stressed out this week.  However, the pantry was, also, going through its own crisis and could only offer a random assortment of products for my baking needs.  Following the advice of Tim Gunn, I made it work.  Behold The Pudding Cake.  In the words of my family, “It’s kind of like Boston cream pie but not.”


For the cake, you will need:

1 box yellow cake mix

1/3 cup oil

1/3 cup water

2 eggs

12 crackers

2/3 cup chocolate chips

Mix together the ingredients in a bowl.  Batter will be closer to cookie dough than cake batter.  Add chocolate chips and crackers last.  Pour into greased pan and bake for 20 minutes at 350 degrees.


Set cake aside and let cool.


For pudding, you will need:

1 box instant vanilla pudding

2 cups chocolate milk.

Mix together until it looks like pudding.


Once cake is cool, top with pudding.  Refrigerate overnight.
