It wasn’t my intention to be so food focused with this series, but I love trying new recipes from magazines. And, I couldn’t resist making the Flourless Chocolate Cupcakes a la Mode featured in the April 2017 issue of Southern Living. They are addicting!

The cake is so moist and chocolate-y that it’s been a great test of will power to not inhale at least half a dozen cupcakes in one go. This wasn’t the only recipe for flourless chocolate cupcakes I found in my glossies this month, but I decided on the version from Southern Living since the recipe didn’t use as much butter or sugar.

I eat mostly gluten-free, which can be tricky when it comes to making desserts. This flourless cake made things easy. Plus, this is the perfect recipe for Easter, Lent, or Passover celebrations. Actually, this recipe is perfect for any dessert eating occasion. It’s that good.

The recipe yielded 12 cupcakes plus enough to fill a mini cake pan. The recipe was easy to follow and didn’t dirty too many dishes (which is always a good thing, in my opinion).

Blogger Confession: I don’t eat a lot of dairy, and since my favorite coconut ice cream was unavailable, I had to use some regular ice cream I discovered buried in the freezer. So, this particular cupcake was all for show. Blogger’s life, am I right?

  3. I’m going to a birthday party next week and I promised to bring the sweets. The only issue is the following weekend we are all traveling to New Orleans where we will have to squeeze into our bikinis so I’m looking for forgiving desserts and this one fits the bill. Topping it with ice cream makes me love you Ashley! 🙂 Have a great weekend

  6. I love this series! So fun and paying homage to an industry that really was the inspiration for fashion, beauty, life style and food blogs. And I like that this recipe features a gluten free option as many people can not do gluten. Great!

  7. I read this recipe in the magazine and seriously wanted to try it but I gave up sweets for Lent. I’m pulling my magazine out to try it for Easter. What a great idea for a series!
